Paul Young is a townie who worked both in the kitchen and in front of the house at George Chin's Greater Downtown Champaign Food and Beverage Company during his college years. After graduating from the U of I, he had a successful graphic design career in Milwaukee and New York City. Upon returning home to Champaign, he became a professor and taught graphic design at Parkland College for 20 years. Since retiring in 2019, Paul has been teaching ethnic cooking classes at Urbana Park District and Common Ground Food Co-op. In 2022, he came out in public and admitted he was also a closeted francophile.

Favorite quote: "I love to cook, but I love to eat more. And what I love to eat most are tasty ethnic dishes with interesting ingredients and potent flavors. My favorite pastime is trying new dishes in restaurants and then attempting to recreate them at home. I'm a curious foodie and an adventurous international culinary explorer who has traveled to 25 different countries (so far). There's no dish that I won't try at least once."

Favorite chef: Anthony Bourdain, this guy really knew how to live life to the fullest.
At the First Annual Global Gastronomic Retreat: Paul will be hosting the French Cuisine Workshop where partipants will be helping him make a seven-course formal French dinner for Saturday evening.
